Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dried cranberries
  • 1/4 cup white chocolate chips
  • 1/4 cup chopped walnuts

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a square baking dish and set aside.
  2. In a large mixing bowl, combine the whole wheat flour, almond flour, coconut flour, coconut sugar, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk together the melted coconut oil, unsweetened applesauce, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined. Fold in the dried cranberries, white chocolate chips, and chopped walnuts.
  5. Transfer the batter to the greased baking dish, spreading it out evenly.
  6. Bake in the preheated oven for about 20-25 minutes, or until the bars are golden brown and set in the middle.
  7. Remove from the oven and let cool completely before cutting into bars.
  8. Optional: Drizzle melted white chocolate on top for extra indulgence.
