Hot enough for you? Get ready to cool off and smile with these good-for-you yet indulgent-tasting treats—there’s something for everyone, no matter what you’re craving.
They’re vegan, and free of gluten, nuts and refined sugar. And yet, they’re also creamy and luscious, chocolatey and rich. The secret: Avocado. Yes! Take chocolate-avocado pudding and freeze it into ice-pop molds, and there you have it. (We won’t tell your kids they’re healthy if you don’t.)
Not only are these cashew-butter-based treats sink-your-teeth-in delicious, they’re also super-pretty from the swirl of strawberry puree. Naturally sweet from the coconut, cashews and berries, they have just a touch of maple syrup, so you could even eat one for breakfast (not that we’ve ever done that, ahem).
This one is definitely for grownups (get your own treat, kids!). Made simply with brewed coffee (you could even use ready-made cold brew) and a bit of honey, then topped with vanilla-coconut cream, it’s so easy to throw together and such an unexpected treat. Add some cinnamon for a cappuccino-like flavor, or blend in some cacao for a mocha granita (we love this mushroom-laced one).
This one takes a little more doing, but it would be super-impressive for a party–and it’s no-bake, so your kitchen stays cool. Plus, it’s both vegan and paleo-friendly, so all of your guests can indulge and enjoy. There’s a pretty swirl on top made with beet powder for even more nutrients—but you can leave it off and just decorate with a few edible flowers or a sprinkle of coconut.
If “cucumber” and “ice pop” seem like an odd pairing to you, it’s time to try these refreshing treats. (You’ve heard the expression “cool as a cucumber, right?) Cucumber is 96 percent water, so it’s hydrating, and it adds a sophisticated flavor layer to these tasty pops. Pineapple adds sweetness (and vitamin C), and mint brings it all together.
