Ingredients

  • 1 can full-fat coconut milk
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup alternative sugar sweetener (such as erythritol or stevia)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a saucepan, combine the coconut milk, cocoa powder, alternative sugar sweetener, vanilla extract, and salt. Heat over medium heat, whisking constantly, until the mixture is smooth and the sugar has dissolved.
  2. Remove the saucepan from heat and let it cool for 10-15 minutes.
  3. Pour the mixture into popsicle molds and insert popsicle sticks.
  4. Freeze the popsicles for at least 4 hours or until they are completely frozen.
  5. When you are ready to enjoy the popsicles, run the molds under warm water for a few seconds to loosen them from the molds.
