Slow Cooker Chicken Noodle Soup Recipe

Ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 4 carrots, peeled and sliced
  • 3 stalks celery, sliced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Place the chicken breasts, carrots, celery, onion, and garlic in the slow cooker.
  2. Add the chicken broth, dried thyme, dried rosemary, salt, and pepper. Stir to combine.
  3. Cover and cook on low heat for 6-8 hours or high heat for 3-4 hours, until the chicken is cooked through and tender.
  4. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  5. Add the egg noodles to the slow cooker and cook on high heat for an additional 30 minutes, or until the noodles are tender.
