To make a healthy pecan pie, you can make substitutions and modifications that reduce the sugar content and replace unhealthy fats with healthier alternatives.

Ingredients

For the crust:

  • 1 ¼ cups of almond flour
  • ¼ cup of melted coconut oil
  • 1 tablespoon of pure maple syrup
  • ¼ teaspoon of salt

For the filling:

  • 1 ½ cups of pecans
  • ¾ cup of pure maple syrup
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • ¼ cup of melted coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a pie dish with coconut oil or use a non-stick spray.
  2. In a medium bowl, combine almond flour, melted coconut oil, pure maple syrup, and salt. Mix until the ingredients are well combined and form a dough-like consistency.
  3. Press the crust mixture evenly into the bottom and up the sides of the prepared pie dish.
  4. In a large bowl, whisk together the eggs, maple syrup, melted coconut oil, and vanilla extract until well combined.
  5. Stir in the pecans until they are well coated with the mixture.
  6. Pour the pecan filling into the prepared pie crust.
  7. Bake for 35-40 minutes or until the center is set and the top is golden brown.
  8. Remove from the oven and let it cool completely before serving.
