Just saying the word “fajitas” makes us dream of that sizzle, and that aroma as the platter comes to the table at our fave Mexican restaurant. If that isn’t enough to love, fajitas are actually so quick and easy to make at home — and they’re delicious, too, perfect for hectic weeknights. Whether you’re craving chicken, shrimp, steak, a vegetarian option, or something else, these healthy fajitas recipes will bring that sizzle right to your own kitchen.

Plus, you can customize them to your own tastes. Pile the fragrant veggies and protein onto greens or some rice (or cauli rice), or serve it the classic way with tortillas. Serve with guac, sour cream, chopped cilantro, or any other toppings you like. The best part: Leftovers taste even better the next day, so you can use these fajitas recipes for meal prep.

Cook black beans with a little garlic while the bell peppers and onion are roasting, and you have a satisfying vegetarian meal on the table in 30 minutes. The recipe calls for 4 bell peppers, 2 green, 1 yellow, and 1 red, but you can use any color combo you like. The quick homemade guac is so tasty, plus it adds fiber and healthy fats.

Portobello mushrooms are a well known veggie stand-in for meat, and they work beautifully in healthy fajitas recipes like this one. With their chewy, meat-like texture and umami flavor, you won’t miss the meat in these. Or, if you do, you can always add your favorite protein of choice.

Marinating the meat in a flavorful mix of juices and spices makes for the most flavorful steak fajitas. One of the juices in this recipe is pineapple, which also tenderizes the meat. Take a few minutes to get the meat into the marinade in the morning, and when it’s time to cook dinner, the meal comes together in minutes. The addition of poblano pepper along with bell peppers and onions adds a touch of heat and a different flavor.

We thought we’d had salmon every way possible — but nope. Here you season the fish with lime juice and Cajun seasoning before blackening in a skillet. Along with the peppers and onion, there are cherry tomatoes in the mix, and a quick, cooling lime-cilantro yogurt sauce for drizzling on top.

Crispy chickpeas are a great snack — and, as it turns out, also a fun addition to fajitas. Toss them, and the veggies, in a quick spice mix, spread on a sheet pan and roast until the chickpeas crisp up and the vegetables are tender, then give everything a quick broil. Add a pinch or two of cayenne to the spice mix or serve the fajitas with hot sauce if you like a touch of heat.
