We love a sandwich, but sometimes it’s too hot to even think about bread. Or maybe you’re in the mood for a salad, but also… not a salad. Or maybe you’re just trying to eat more veggies? These lettuce wraps (and rolls and cups) are about to be your new best friend. They’re part-salad, part-sandwich, 100% delicious. Even better? They all take less than 30 minutes to make.
1. Vegetable Spring Rolls With Peanut Sauce from Damn Delicious
These light and refreshing rolls with a bit of creamy peanut sauce for dipping are also downright gorgeous. You can obviously enjoy these by yourself, but we also think they’d be lovely for entertaining. You can wrap rice paper around the lettuce to make them even sturdier and also add extra crushed peanuts on the side for some crunch.
2. Rainbow “Raw-maine” Taco Boats from Minimalist Baker
These raw-maine (get it?) lettuce cups are ideal for summer because you don’t need to turn on the oven. These are stuffed with beet hummus, fresh veggies, and hemp seeds and drizzled with a creamy tahini sauce — and they’re ready in just 15 minutes.
3. Spinach Artichoke Chicken Burgers from Paleo Running Momma
A lettuce wrap is an excellent swap for a burger bun, especially when the burger in question is a chicken burger with spinach, artichoke hearts, onion, and ginger. Super-flavorful, super-filling, and also Whole30, paleo and keto approved.
4. Mango Avocado Chicken Lettuce Wraps from Recipe Runner
These lettuce wraps are tropical and summery, with healthy fats and protein in every bite. They’re also ready in 20 minutes.
5. White Bean Lettuce Wraps from Making Thyme for Health
Black beans and chickpeas get all the love, but white beans are full of fiber and protein, too! And they taste great in a lettuce wrap with veggies, avocado, and fresh herbs. These wraps from Making Thyme for Health take just 15 minutes to make.
6. Instant Pot BBQ Chicken Lettuce Cups from The Toasted Pine Nut
The Instant Pot makes it easy to get these BBQ chicken lettuce cups on the table in less than 30 minutes. They’re delicious as is, or add in chopped veggies, like zucchini and sweet corn, beans, cheese, and spices, like paprika and jalapeno.
7. Asian Chicken Lettuce Wraps from Joy Food Sunshine
This quick and easy recipe is a healthier take on P.F. Chang’s version, but it’s every bit as delicious. As written, the recipe is gluten- and dairy-free, but Laura also gives substitution tips for those avoiding peanut butter, soy or other food allergies or sensitivities.
