Sweet Potato Sundae

1 sweet potato
1 Tablespoon almond butter
1 Tablespoon hemp hearts
1/2 teaspoon cacao nibs
1 Tablespoon toasted coconut flakes
1/4 cup fresh blueberries
1/4 cup fresh raspberries
Line a baking sheet with aluminum foil, then bake the sweet potato at 425 degrees for 50 minutes, or until it's easily pierced with a fork.
Using a knife, split the sweet potato open, then using a fork, incorporate the almond butter into the sweet potato flesh.
Sprinkle the remaining ingredients over top.
Cook several sweet potatoes at once and keep them on hand for the week — they reheat in the microwave in just one minute, making this a quick and easy breakfast.
