Sweet Potato Sundae

Ingredients

1 sweet potato

1 Tablespoon almond butter

1 Tablespoon hemp hearts

1/2 teaspoon cacao nibs

1 Tablespoon toasted coconut flakes

1/4 cup fresh blueberries

1/4 cup fresh raspberries

Directions

  1. Line a baking sheet with aluminum foil, then bake the sweet potato at 425 degrees for 50 minutes, or until it's easily pierced with a fork.

  2. Using a knife, split the sweet potato open, then using a fork, incorporate the almond butter into the sweet potato flesh.

  3. Sprinkle the remaining ingredients over top.

RECIPE NOTES

Cook several sweet potatoes at once and keep them on hand for the week — they reheat in the microwave in just one minute, making this a quick and easy breakfast.
