Spiced Nut Clusters

Ingredients

1 cup raw pecan halves

1 cup raw cashews

1/2 cup raw pistachio nuts

1/2 cup raw slivered almonds

1/2 cup pumpkin seeds

1/2 cup unsweetened coconut flakes

3 Tbsp cacao nibs

3 Tbsp hemp hearts

2 Tbsp chia seeds

1 tsp cinnamon

1 tsp sea salt

1 tsp cumin (optional)

1/2 cup aquafaba

1/4 cup dried unsweetened berries, chopped dates, etc (optional)

Directions

  1. Preheat oven to 325 degrees F (160 C).

  2. Place the nuts, coconut, hemp hearts, cacao nibs, chia seeds, cinnamon, salt, and cumin (if using) in a medium-sized mixing bowl. Toss to combine.

  3. Add aquafaba to a large mixing bowl. Using an electric mixer, whip into loose peaks similar to meringue.

  4. Gently fold the aquafaba into the dry ingredients.

  5. Spread the mixture evenly onto parchment-lined baking sheets and bake for 30-35 minutes (until deep golden brown). Stir and rotate the trays at the halfway point.

  6. Let cool completely, then add dried fruit (if using). Place in an airtight container.

RECIPE NOTES

Cinnamon and cumin are a great flavor combination for savory nut clusters, but if you want a sweeter profile without the added sugar, feel free to swap the cumin for nutmeg.
