Grilled Watermelon with Feta, Jalapeños, and Honey

Ingredients

8 1-inch-thick slices watermelon, cut into small wedges

1 1/2 teaspoons extra virgin olive oil

Pinch of kosher salt

Pinch of freshly ground black pepper

1 jalapeño, chopped (for less spicy, remove seeds, for spicier, keep some or all seeds in)

3 tablespoons chopped cilantro

2 oz. crumbled feta cheese

2 teaspoons honey

1/2 medium lime

Directions

  1. Preheat a grill to medium-high heat. Brush watermelon with olive oil and sprinkle with salt and pepper.

  2. Place watermelon on grill and cook for 3 to 4 minutes per side, until it's warmed enough throughout to establish grill lines. Arrange on a platter.

  3. Sprinkle jalapeño, cilantro, and feta over watermelon. Drizzle with honey and squeeze lime half over.
