Three Easy Ways to Make Spring Vegetables Taste Better

Spring vegetables do not need much to taste good. A few small changes can make them feel a lot more exciting — and help them stand out instead of getting lost on the plate.

1. Roast vegetables directly on the pan

When you roast vegetables, skip the parchment paper if you can.

Vegetables brown and crisp up better when they are in direct contact with a hot sheet pan. That extra browning gives them more flavor and helps them caramelize instead of steam.

This works especially well for spring vegetables like asparagus, radishes, snap peas, and fennel.

Just toss the vegetables with olive oil, spread them out so they are not crowded, and roast them on a hot pan.

2. Add more texture to salads

A good salad has a mix of textures and flavors.

Instead of using just lettuce, try combining a few different ingredients — something crunchy, something creamy, and something sweet or bright.

For example, butter lettuce, cucumber, avocado, berries, and a crunchy vegetable like snap peas or bok choy make a salad feel much more interesting and satisfying.

3. Make a simple homemade dressing

A homemade dressing can completely change how a salad tastes.

You do not need a complicated recipe. A simple mix of olive oil, lemon juice or vinegar, a little Dijon mustard, and a pinch of salt is often enough.

You can also add fresh herbs, garlic, or a little honey if you want more flavor.

Homemade dressings usually taste fresher than bottled ones, and they make vegetables feel much more appealing.
