When midday rolls around, do you find yourself wandering around the kitchen wondering what to make and grazing on everything you see? The lunch struggle is real and, after more than a year of cooking more than we ever have before, we all could use some help. It turns out Costco is a great place to stock up on staples for quick and healthy lunches.

Yes, the warehouse store may devote a significant amount of square footage to TVs, toilet paper and cleaning supplies, but it also has a solid selection of heat-and-eat or easy-to-assemble foods ideal for quick and healthy lunches. Here are a few of our favorites.

1. Seeds of Change Quinoa and Brown Rice with Garlic

These envelopes of organic cooked quinoa and brown rice are ready in just 90 seconds. They make an ideal base for grains bowls topped with beans, greens and a dollop of super-flavorful, almond-based Organic Chipotle Bitchin Sauce

2. Sukhi’s Chicken Tikka Masala

Made with antibiotic-free, certified halal chicken, this richly flavored Indian entrée ready in minutes. Want to change it up? Costco also carries Sukhi’s Chicken Coconut Curry with Mango.

3. Milton’s Cauliflower Crust Roasted Vegetable Pizza

This is as simple as it gets: Preheat the oven, unwrap the pizza and pop it in. But unlike most other frozen pizzas, this one is actually good for you. Made with a cauliflower crust and topped with an assortment of roasted vegetables, it offers a rainbow of nutrients, and it’s one of the best-tasting cauliflower crust pizzas out there.

4. Lilly B’s Organic Bean, Rice & Cheese Burritos

Bean and cheese burritos are just so comforting and we love that this organic frozen option uses brown rice. Warm them in minutes in the microwave and serve alongside a salad or vegetables like Tattooed Chef Organic Greens, a pre-cooked medley of zucchini, broccoli, green beans, peas and leeks cooked in vegetable broth and seasoned with leeks.

5. Taylor Farms Organic Avocado Ranch Chopped Salad Kit

This organic kit makes tossing together a delicious salad super easy. It combines romaine, cabbage, kale, and carrots with smoked white cheddar, avocado puree, and corn flax chips for crunch. Yum!

6. NaturSource Organic Salad Toppers

These organic mixes of seeds, nuts, and dried fruits mean you can layer your salad with more protein, fiber and flavor with just one scoop. Pair with Earthbound Farm Organic Power Greens, a quick vinaigrette, and leftover chicken or chickpeas for protein.

7. Pasta Prima Organic Chicken & Mozzarella Ravioli

Fresh ravioli cook in mere minutes, and these are stuffed with chicken, and organic mozzarella, ricotta, and romano cheeses. It’s perfect with Kirkland Signature Pesto

8. Trident Wild Alaskan Salmon Burgers

Keep a package of these patties in the freezer and you’ll always have an omega-3-rich lunch or dinner at the ready. Made with wild salmon and seasoned with garlic, onion and mustard powder, they’re quite flavorful and cook up in just a few minutes in a skillet. Serve on a bun or with a side salad.
