Rice, oats, and quinoa are great and all, but variety is key when it comes to eating healthy. That’s where wheat berries come in. They’re similar to farro (both are varieties of wheat), with a nutty, earthy flavor and hearty texture. You can grind them into flour for baking — but we like to use them in salads, sides, and other dishes. We’ve gathered a collection of wheat berry recipes so you can explore this healthy grain.

Are wheat berries good for you?

Yes. A wheat berry is a whole wheat kernel, containing the bran, germ, and endosperm, loaded with fiber, B vitamins, and minerals. Like other whole grains, wheat berries may help lower the risk of diabetes, heart disease, and other illnesses.

How to cook wheat berries

Like other grains, wheat berries are simple to cook. Here are basic instructions:

  • Rinse 1 cup wheat berries
  • In a saucepan, combine the wheat berries with 2 ½ cups of water and ½ teaspoon salt. Bring to a boil, then reduce the heat to low, cover the pan and simmer until the wheat berries are tender, about 1 hour
  • Drain and serve or let cool, then refrigerate

You also can cook wheat berries in a slow cooker or Instant Pot. Use broth instead of water for a savory edge.
