The Best Potato Salad Is Mayo-Free

I know that potato salad is something that is usually associated with mayo — and lots of it. But I am here to tell you that potato salad doesn’t need, or even want, mayo! What it really wants? Vinegar, olive oil, mustard, and lots of fresh herbs. Bacon and pickles are optional (though highly recommended).

Let me back up by saying that my mom is German and that I was raised to love bacon and pickles and liverwurst and dark brown bread. I am aware that these things are not to everyone’s taste, which is why I’m recommending this potato salad from Foodie Crush. It’s light and herby and free of bacon and pickles (although, again, if you want to add them in, you will get no complaints from me).

The Best Potato Salad Is Mayo-Free

Here are the things I look for in a potato salad: It should be easy to make and easy to transport without the risk of spoiling. It should also be flavorful, but crowd-friendly (i.e. not too far out there). Bonus points if it feels a little fancy.

This recipe checks all those boxes. It uses small red potatoes that don’t need to be peeled. It tastes even better the next day, which means you can and should make it ahead of time. And it has a fresh, slightly French flavor thanks to white vinegar, Dijon mustard, red onion, and loads of herbs.

It’s also very customizable. Use purple potatoes, for example, to make this a statement piece. Switch up the herbs with whatever you have on hand. The recipe calls for basil, parsley, and dill, but any tender herbs will do. Chives would be great! And if you like crunch, why not add in some celery? Not to harp on the whole bacon and pickles, thing, but if you like that kind of thing, you won’t regret it.
