With so much produce abundant in the grocery store and farmers market all summer, there’s a ton to choose from, and so many ways to use it all. Bonus: Grilling is so easy, and your kitchen stays cool. Enjoy these dishes as entrees, or alongside whatever protein is on the menu.

What’s more even more summer than grilled veggies? Grilled veggies on kebobs. Pair them with a flavorful sauce like tzatziki or pesto, and you’ve got a fresh and flavorful side or a meatless main.

2. Grilled Eggplant & Spinach Salad

4. Grilled Asparagus with Balsamic Reduction

Asparagus on the grill is delicious with just olive oil, salt, and lemon juice, but why not take it up a few notches by drizzling it with a balsamic reduction? 6. Grilled Romaine Salad with Corn, Fava Beans, and Avocado

If you’ve never tried grilling heads of hearty romaine lettuce, now is the time. Just a few minutes on the grill relaxes the lettuce and infuses it with a smoky flavor that’s so satisfying. Serve this salad on its own, or top it with grilled shrimp, salmon, or chicken.

7. Grilled Zucchini with Feta and Basil

Zucchini and basil are both very abundant in the summer, so they’re economical as well as really delicious and healthy. Toasted pine nuts add a nice crunch.
