Warm Kale & Roasted Root Vegetables, Turmeric & Cider Vinaigrette

Ingredients

6 c Lacinata Kale

.50 C each medium diced parsnips, rutabagas, turnips

.50 c medium diced green apples

4T Olive oil

Salt & Black Pepper

Vinaigrette:

2T cider vinegar

1C apple cider

.50 tsp cinnamon

.50tsp turmeric

.50 tsp. sea salt

Directions

  1. For vinaigrette place all ingredients in a sauce pan and bring to a boil and reduce by ¾.

  2. In a large sauté pan cook root vegetables in 2T olive oil till lightly browned. Place in oven and roast until tender. Remove vegetables from pan and sauté apples in remaining olive oil for one minute add kale and cook till it is wilted.

  3. Add root vegetables back to pan and add vinaigrette. Cook until kale is tender. Season with salt and pepper and serve.
