
Healthy Edible Cookie Dough

1 cup plus 2 tablespoons almond flour
3 tablespoons coconut flour
¼ cup maple syrup
3 tablespoons coconut oil, melted (refined or unrefined)
1 1/2 teaspoons vanilla
1/4 teaspoon salt
¼ cup chocolate chips
Directions

In a medium sized mixing bowl, stir all ingredients except chocolate chips together with a fork. Continue stirring until a consistent and uniform texture is formed, with no lumps. Add chocolate chips, and fold them in.

Serve as is, scooped into small bowls with an ice cream scoop or a teaspoon, or form into truffles. To form into truffles, scoop up a tablespoon of dough with your hands or a teaspoon, and roll between your palms until spherical in shape. Refrigerate any leftovers.
