- 1 roasted sweet potato you prepped Sunday (recipe above) cut open
- 1 cup of braised lentils you prepped Sunday (recipe above)
- 1⁄2 an avocado sliced
- 1 tablespoon of chopped cilantro
- 1 lime wedge
- Heat up the lentils and potato (about 2 minutes each in the microwave).
- Stuff lentils in the potato.
- Top with avocado, cilantro and a lime squeeze.
