Ingredients

1 cup of arugula

Handful of chopped tuscan kale

Tuna​ ​Salad​ ​you​ ​prepped​ ​Sunday​ ​(recipe​ ​above)

1 tablespoon of pitted olives

1⁄2 an avocado

1 hard boiled egg, peeled and cut in half

Handful of blanched green beans

4 tablespoons of olive oil

Juice of one lemon

Salt & Pepper to taste

Directions

  1. On a bed of arugula, arrange tuna salad, olives, avocado, egg, and green beans

  2. Whisk together olive oil, lemon juice, salt and pepper and drizzle over the salad
