  • 1 cup of arugula
  • Handful of chopped tuscan kale
  • Tuna​ ​Salad​ ​you​ ​prepped​ ​Sunday​ ​(recipe​ ​above)
  • 1 tablespoon of pitted olives
  • 1⁄2 an avocado
  • 1 hard boiled egg, peeled and cut in half
  • Handful of blanched green beans
  • 4 tablespoons of olive oil
  • Juice of one lemon
  • Salt & Pepper to taste


  1. On a bed of arugula, arrange tuna salad, olives, avocado, egg, and green beans
  2. Whisk together olive oil, lemon juice, salt and pepper and drizzle over the salad
