Nicoise Salad

Ingredients
- 1 cup of arugula
- Handful of chopped tuscan kale
- Tuna Salad you prepped Sunday (recipe above)
- 1 tablespoon of pitted olives
- 1⁄2 an avocado
- 1 hard boiled egg, peeled and cut in half
- Handful of blanched green beans
- 4 tablespoons of olive oil
- Juice of one lemon
- Salt & Pepper to taste
Directions
- On a bed of arugula, arrange tuna salad, olives, avocado, egg, and green beans
- Whisk together olive oil, lemon juice, salt and pepper and drizzle over the salad
