- 1 shredded breast of Roasted Chicken you prepped Sunday (recipe above)
- 1⁄2 cup of Vegetables (recipe above)
- 1 cup of arugula
- 1⁄2 an avocado sliced
- 2 tablespoons of olive oil
- Juice of 1⁄2 a lemon
- Salt and pepper to taste
- 1 teaspoon of chopped parsley
- Sprinkle of pepitas
- On a bed of arugula, place chicken, vegetables and avocado.
- Whisk together olive oil, parsley. lemon juice salt and pepper and drizzle over salad.
