The Instant Pot is typically seen as a wintertime staple for making hearty soups, chilis, and meat dishes that will warm you up. Yet, you can also use your Instant Pot or pressure cooker for a summer meal, such as tacos, lemon chicken, and even a soup that’s more fitting for those warmer months. The Instant Pot makes meal prep, cook time and weeknight meals a breeze, since you can put all the ingredients in and let it do its thing while you’re out and about enjoying the sunshine. Here are five delicious recipes that use summer’s finest picks and that will taste great at any outdoor bbq.
Chicken lettuce cups, instead of chicken tortillas, work well for summer instant pot recipes that are low-carb and packed with flavor. These chicken tacos are filled with bbq flavor and the shredded chicken has satiety promoting protein to keep you full for hours. Add in your favorite toppings, like chopped veggies, like zucchini and sweet corn, fibrous foods, like black beans or baked beans, cheese, and spices, like paprika and jalapeno.
An easy instant pot recipe, these chicken thighs are great to have on hand at home, where as long as you have that main protein you can then use it for a variety of meals, like as a salad topper or stuffed into a burrito. Keep it low-carb and keto and eat it as is with a side of veggies or shred to make lettuce cups. These are tender and thyme-roasted and are finished in just five minutes.
This 30-minute crockpot meal can be made in bulk to have as leftovers for easy weeknight meals. Sweet corn adds natural sweetness and it’s right in season, while chicken provides hearty protein. Plus, you can play with toppings, such as adding in shredded Parmesan cheese or a dollop of avocado or Greek yogurt for creaminess, and if the latter, probiotic benefits.
Tacos are the ultimate backyard summer bbq food, and these vegan tacos are free of meat and dairy but use jackfruit to give it that meaty, thick texture. The mango adds some vitamins, like vitamin C, as well as natural sweetness to complement the spices. Add diced avocado for extra heart-healthy fats and flavor. If you’re not vegan, swap for pork and make carnitas.
Stone fruits, like peaches, are at their peak in the warmer months, so use them with chicken to make a fruity, sweet dish that’s light and just screams summer. You can use chicken breast or thighs, either works. And use any leftovers to stuff into bread for a sandwich or in lettuce cups for an easy wrap.
Sweet corn is one of the best summertime foods to use as a side dish for bbq parties and weeknight meals on the grill. Plus, it takes 3 minutes, total time, so it couldn’t be easier. You can add whatever toppings you want for flavor, such as going with cajun influences, savory picks like herbs and cilantro, or even sweet choices, like taking it off the cob to make a fruit salsa for chips and dip.
