Veggie burgers hit the spot whether you’re craving something to stick in a (preferably whole-wheat) bun, put on top of a salad, or serve as a vehicle for your favorite dip. And while there are some good store-bought options, there’s a wide-open playing field of plant based patty recipes out there, combining veggies, nuts, seeds, grains, and legumes into something magical. And it’s easy, and sometimes actually relaxing, to make plant based patties yourself and freeze them for future meals and snack sessions.

But which veggie burger is the right one for you? We’ve rounded up some of our favorites, whether you are looking for something low-carb, grain-free, or loaded with greens.

2. Low-Carb Vegetable Breakfast Patties from Carb Manager

Looking for something low-carb that can work for breakfast, lunch, or dinner? These zucchini-heavy patties could be a base for a meal at any time of day.

3. Green Monster Veggie Burger from Vegan Heaven

Fresh and frozen green vegetables give this Monster a fun and vibrant color, while oats, breadcrumbs and walnuts lend some heft so you don’t feel like you’re eating a vegetable smoothie burger. You may want to keep the simple vegan sun-dried tomato mayo hack on mental file for other dishes.

4. Spicy Panko Chickpea Patties from Tori Avey

If you want your patties super-crispy, panko flakes (Japanese white breadcrumbs) are the secret ingredient. Cayenne pepper give these fritter-ish chickpea patties a little heat that you can control, but they aren’t stunt-level spicy in nature. Bake them in the oven or get them even crispier in your air fryer.

5. Nutty Veggie Burgers from Food52

These grain-free patties combine black beans and a combo of nuts and/or seeds that you can customize to your liking or what you already have in your pantry. If you’re mixing by hand, you can even use a nut or seed butter instead. The recipe recommends serving atop English muffins, but we think they’d be particularly good centerpieces for salads.

6. Eggless Lentil Patties from Mommy’s Home Cooking

These protein-packed lentil patties take just 15 minutes to make and are also super-versatile. Choose whether or not you want to use an egg, whether to cook them in a skillet or bake them, and how you want to serve them. We love the idea of tucking them into pitas with a big dollop of yogurt.

These raw vegan burgers are nut-free, grain-free, and beet-free. Spices, fresh herbs, nuts, and sun dried tomatoes give these patties a ton of flavor — and the recipe can also be used to make meatballs served with veggie noodles.
