By adding hearty grains and winter’s best produce (hello, sweet potato), you can make a delicious, comforting lunch or dinner that even your summer bbq buddies will envy. WHOLE BEET RISOTTO SALAD Abby from @abbysfoodcourt here for my final TWN takeover post. I have had so much fun sharing tips on how I reduce my waste and how doing so promotes healthful eating. . . Tip #3: "Root to frond" cooking involves cooking the WHOLE plant (stalks, roots, peels, stems, seeds, leaves). ✨This reduces waste and boosts nutrient density as each part of the plant contributes different nutrients.✨ For this #beet risotto, I used the beet root, stem, and leaves. Beet greens are rich in vitamins K, A and C, iron and fiber. Beet stems provide fiber and the phytochemicals betalains (#antiinflammatory #antioxidants) and the beet roots provide folate, potassium, vitamin C, fiber, and betalains. The beet juice dyes the rice to make a gorgeous pink rice. The next time you chop your vegetables think about using parts you normally throw away (or compost!). I also freeze peels to make stock. SPINACH, ZUCCHINI & GRILLED BALSAMIC TOFU SALAD If it wasn't because of this incred meatless Monday dinner, I would've been elbow deep in those nut butter jars by now ????????????But it's day 7 of @furtherfood sugar detox challenge and I feel fabulous so I'm sticking with it! ???????????? . . Grilled Balsamic Tofu Pat dry and slice organic extra firm tofu vertically. In a bowl, combine ⅓ c balsamic vinegar, 2 tbsp water, 1 tsp @simplyorganicfoods Rosemary and sage, sea salt and pepper, you may also sweeten with honey or stevia but I opted out because I'm trying to reduce my sugar intake #sugarpledge). Place Tofu on a shallow tup. Pour marinade and store in fridge for 2 hours (I left mine overnight). Grill or sauté for 10 min ✨ Enjoy on a bed of spinach, sautéed zucchini {Season with garlic powder, sea salt and pepper + @kouzinifoods olive oil. Saute over medium high heat}???? + @mediterraneanorganic kalamata olives, cherry tomatoes + hemp hearts drizzled with homemade balsamic and a side of @simply7snacks kale chips ????????????

BRUSSELS SPROUTS, AVOCADO AND JUICY CHICKEN SALAD this may be one of the best salads i've ever had!???? nothing fancy or genius, just a healthy combination of greens topped with a perfect super juicy chicken that took only 10 minutes to cook! • make it: heat a lightly oiled (I used @chosenfoods avocado oil ) frying pan over high heat. meanwhile wash&towel dry your chicken. rub it with @chosenfoods avocado oil, circassian garlic salt, pepper, oregano and turmeric. lower the heat to medium and cook your chicken for 4 minutes on each side, then cover with lid and cook for another two minutes or until ready. how easy is that?! i massaged kale with @chosenfoods avocado oil, seasoned with pink salt and pepper, added avocado, roasted broccoli, brussels sprouts and sweet potatoes. so good!! off to visit our best friends and spend quality time with them❤
