We’re not saying that’s a bad thing — after all, summer is the time for all  the salads, grilled everything, and (obviously) ice cream. But, if you’re ready to get back in the kitchen, or even if you’re thinking you might be ready to get back in the kitchen, these healthy casseroles are a great place to start.

We know that casseroles can be heavy and rich (and sometimes that’s exactly what you need). But that’s just one definition of the dish. Casseroles can be healthy, too. Pack them with vegetables, load them with whole grains and lean protein, and casseroles become a nutritious choice at the dinner table.
