7 Quick & Clean Ways to Turn a Box of Chicken Broth Into Dinner

With a box of chicken broth — or some you’ve made yourself and frozen at home — we always have the beginnings of a meal. It’s responsible for so many cooking tasks. It can help deglaze a pan. It is often combined with other ingredients to make sauces and gravies, but it is, in its own right, a cooking liquid that imparts a ton of flavor. Be sure to choose a low sodium chicken broth option so you can adjust the salt to your preference.

If you’re wondering what to do with the broth that’s languishing in your pantry, here’s some inspiration that goes is truly thinking outside the box! Use it in a dairy-free risotto with chicken, as the cooking liquid for a creamy polenta dish or a creative couscous salad, and, of course, as the backbone of soups that go beyond chicken noodle.

There’s no rule that says that risotto has to be loaded with lots of cheese. In fact, this one is brimming with veggies such as peas, onions, and peppers, and a couple of cups of shredded or cubed chicken (good use of leftovers!) Gluten free, too!
