Chicken breast is an affordable, versatile, and lean source of protein that so many of us rely on. But it has a reputation for being, well… YAWN. And yet, we urge you to resist the temptation to slather it in cheese, bread it, or fry it to make it taste more exciting. There are plenty of other, healthier ways that can really make chicken breast shine. Yes, really!
From mango salsa chicken to Instant Pot chicken burrito bowls, here are 10 recipes that prove chicken breast is secretly awesome. (Once you find the right recipes, it’s almost impossible to get bored with it.)
1. Mango Salsa Chicken from Creme de la Crumb
Mango salsa is the star of this dish and it comes together easily with just a few ingredients: mango, bell pepper, cilantro, red onion, and a squeeze of lime. While you’re putting that together, marinate the chicken with cumin, chili powder, garlic powder. And then you choose your own adventure: Bake or grill, it’s up to you!
2. Honey Balsamic Chicken Breasts and Veggies from Damn Delicious
Want to see how easy dinner can be? Marinate some chicken with balsamic vinegar, honey, Dijon mustard and dried herbs; add some potatoes and tomatoes; sprinkle with parsley and cook it together in one pan. Dinner, done — in 30 minutes.
3. Chinese Orange Chicken from Jessica Gavin
There’s no deep frying going on here, and no extra sticky and sweet sauce. Instead, you’ve got a recipe with fresh orange juice and zest, honey, and a little bit of heat. Serve this stir-fry with rice and dinner is ready.
4. Slow Cooker Chicken Burrito Bowls from a Sweet Pea Chef
Loaded with veggies, seasonings you likely have right in your pantry, and black beans, this recipe also makes your house smell incredible. Cook up some cauliflower rice while the chicken does its thing.
5. Perfect 20-Minute Oven Baked Chicken Breasts from Averie Cooks
It’s all about the marinade. This one’s both sweet and spicy and we can imagine serving it with a side of rice (cauliflower or otherwise) and some good steamed green veggies. Plus, it makes extra, which means you have more than one meal in store.
6. Grilled Chicken with Coconut Lime Slaw from Good Housekeeping
The chicken gets grilled with just salt and pepper, and the slaw makes it all come to life with a little bit of lime juice, fish sauce, and coconut milk.
7. Healthy Thai Chicken Lettuce Wraps from Food With Feeling
It’s easy to assemble these lettuce wraps for lunch (or dinner) as the week goes on. Cook once, eat multiple times. Always a good way to go!
8. Spinach Stuffed Chicken Breast from That Low Carb Life
Looking for creative ways to get your family to eat their veggies? Try stuffing them in chicken (along with some cheese). And don’t stop at spinach; other leafy greens plus tender veggies like asparagus and even cherry tomatoes are fair game.
9. The Juiciest Grilled Chicken Kabobs from Gimme Some Oven
The secret to these super-juice chicken kabobs? Brining them in salt water for at least 15 minutes. Cut into chunks, season, grill, and pair with whatever veggies you have on hand.
