5 Delicious Chia Seed Recipes That Aren’t Mushy at All

We really want to fully embrace chia seeds around here at Clean Plates. After all, they’re packed with protein, fiber and omega-3s. But some of us just can’t get past their tendency to make everything into a mushy mess. Even a little bit in your smoothie instantly turns things thick and gooey. And honestly: Do we really need any more chia pudding recipes? (This is a rhetorical question, but the answer is clearly No we do not.) That’s why we’re so excited about these not-mushy-at-all chia seed recipes. They’ve certainly made an enthusiastic believer out of me.

1. Coconut Cashew Chia Energy Bites from A Beautiful Plate

If you’ve been searching for the perfect energy bite, one that has texture and crunch and sweetness and sophistication, this recipe is for you. The key is leaving some ingredients out of the food processor and mixing them in by hand. A hint of orange zest makes this feel like a grown-up treat, but we’re pretty sure kids will love these, too.

Have you stumbled upon the Trader Joe’s chia and flax peanut butter? It’s delicious. But if you don’t live near a TJ’s, or you want to try something different, or you need to stay away from nuts, this super seedy sunflower butter does just the trick.

3. Seedy Quinoa Chocolate Bark from Broma Bakery

Healthy and chocolate are two words that we should see used together more often. Almonds, walnuts, pumpkin seeds, chia seeds, flax seeds. I mean, on their own they’re great, but combined with quinoa and a layer of chocolate on top, it’s hard to go wrong.

All you need to make these crackers are almonds and cashews, some salt and some eggs. Sprinkle the tops with chia and pumpkin seeds. Crunchy, delicious, nutritious, and gluten free.
