My pantry is never without at least a few cans of tomatoes. To me, they are dinner ready and waiting. Right now, that’s more important than ever. My preference is for whole peeled tomatoes, because I find them the most versatile: You can dice them, crush them, or even puree them, if needed. However, these days I am not picky. I’ll take whatever I can get on my infrequent grocery runs, whether that means I am grabbing a couple of cans of fire-roasted tomatoes or even diced tomatoes with green chiles like Rotel. They all hold so much potential for healthy, easy dinners. Here are 5 pantry-friendly recipes to inspire your next meal.
