Often, my very favorite meals are the ones that require the least amount of clean-up — I hardly think I am alone in that mentality. Having only a few dishes to wash at the end of the night is a major dinner win, in my opinion. It’s even more of a win if the dinner that’s tossed together is a healthy one. These 10 recipes are equal parts cozy and nutritious — they’re a big hug at the end of the night that also get you out of the kitchen and onto the couch sooner.

This vegetable-packed curry is wonderful served over cooked brown rice or quinoa but if you’d rather not dirty another pot, skip the grains and call it a soup.
