5 Things to Do with an Avocado (Before It Goes Bad)

We don’t have to tell you how awesome avocados are. Aside from being insanely healthy (an avocado has 9g fiber—9!—plus potassium, vitamin K, and about a zillion other nutrients), they’re also one of the most versatile foods, morphing seamlessly into everything from a base for brownies, a vessel for baked eggs, a smoothie booster and even pasta sauce.

But hey, there are even more cool uses for this green wonder; here are some of our easy faves:

Avocado ice pops

1. Fudgy ice pops

If you’ve tried avocado chocolate mousse, you know that the earthy taste disappears and all that’s left is the silky texture from all that healthy fat. Pouring it into ice-pop molds is next-level awesome. We don’t care if it’s cold outside or not, we want one of these now. (Got kids? Give them one of these rich treats—but don’t tell them what’s in it until after they’ve finished it.)

2. Pesto

No, there’s absolutely nothing wrong with classic pesto—but using an avocado as the base for it adds even more nutrients and richness. It works beautifully with basil, and also in a cilantro pesto with pumpkin seeds.

3. Fries

Wait, what? Yes, you read that right: Avocado fries. Ta-ta, taters, there’s a new fry in town. (Here’s an alternative if you prefer yours plant-based.)

4. Hollandaise

Give your eggs Benedict a healthy twist by whipping up an avo-based hollandaise with olive oil, lemon juice and a touch of cayenne. Pro tip: It’s also less fussy than the classic sauce, which can break easily.

5. Face mask

You don’t have to spend a zillion dollars on a pricey facial. Just combine avo with another ultra-trendy ingredient, turmeric, plus lemon and yogurt and you have a delicious face mask that will leave your skin looking and feeling fresh, clean and glowy.
